Best Bites: One-pot lasagna soup

Put a spin on family lasagna night with this delicious, one-pot lasagna soup. It has all the flavor and taste of a lasagna dish, but without the work! Made with spicy tomato sauce, ricotta and noodles, this recipe will simplify your weeknight dinners. Make sure to add a sprinkle of fresh parmesan for the finale.


  • 1 yellow onion
  • Oil
  • 1 lb lean ground beef
  • 4-5 garlic cloves
  • 1/2 tsp red pepper flakes
  • 2 can crushed tomatoes
  • 1 jar pasta sauce
  • 8.5 cups low sodium chicken broth.
  • 1 1/2 tsp sugar
  • 1 tbsp dried basil
  • 1 tsp parsley
  • 1 tsp oregano
  • 1 tsp salt
  • 1 bay leaf
  • 10 uncooked lasagna noodles broken into pieces
  • 1/2 cup cream
  • 1/2 cup mozzarella
  • 4 tbsp ricotta


  1. Chop onion and sautee in pan with oil.
  2. Add in beef.
  3. Brown meat.
  4. Add garlic and red pepper.
  5. Add in tomatoes and pasta sauce.
  6. Pour in 8 cups chicken broth and sugar.
  7. Add in dried basil.
  8. Sprinkle parsley, oregano and salt.
  9. Add in bay leaf.
  10. Toss in lasagna noodles.
  11. Simmer 20-30 minutes.
  12. Stir in cream.
  13. Add in 1/2 cup chicken broth.
  14. Stir, stir, stir!
  15. Add in mozzarella and ricotta.
  16. Stir, stir, stir!
  17. Dig in.
