This week we're incorporating more spring produce into our meals — peas, arugula, artichokes, spinach, onions and garlic. They're all coming into season, meaning this is when you'll find them at their freshest (and cheapest!) at the grocery store.

Take the One-Pot Spinach Pea Pasta for example; the recipe calls for frozen veggies, but you can use fresh ones just as easily. The orecchiette noodles hold the peas and chopped spinach like little cups, so each bite is a flavorful one. The whole dish is mixed with heavy cream and like all of the best pasta dishes, Parmesan cheese. Make a little extra and you can easily reheat this for lunch the next day.

The Sizzling Shrimp Scampi is as easy as arranging shrimps in an au gratin dish, dousing them with butter and herbs and placing them in the oven until the butter is bubbling hot. You can use thick pieces of bread to soak up the extra butter or pair this dish with a little orzo.
