Best Bites: Chicken pad Thai

We get it. Sometimes, you're hit with an overwhelming craving for Asian food. You mindlessly dial your local Thai joint for takeout, convinced that your favorite go-to serves up the best Pad Thai in the city. Lucky for you, however, we have the inside scoop on how to make the best pad Thai at home. It's easy, quick and delicious, you won't call for takeout ever again!

Ingredients

  • 1/4 cup soy sauce

  • 1/4 cup packed dark-brown sugar

  • 1 tbsp lime juice

  • 2 tbsp rice vinegar

  • 1 tbsp fish sauce

  • 2 tbsp vegetable oil

  • 1 lb chicken breast

  • 1 1/2 cup carrots, chopped

  • 1 bell pepper, chopped

  • 4 green onions, diced

  • 2 cloves garlic

  • 2 cups bean sprouts

  • 3 eggs

  • 1 pack rice noodles, cooked

  • Peanuts

  • Cilantro

Directions

  1. Mix soy sauce, sugar and lime juice.

  2. Add vinegar and fish sauce.

  3. Whisk, whisk, whisk!

  4. Heat 1 tbsp oil.

  5. Saute chicken 4-6 minutes.

  6. Remove from pan.

  7. Leave oil in pan.

  8. Cook carrots, peppers in oil.

  9. Saute 1-2 minutes.

  10. Add onions, garlic and bean sprouts.

  11. Add eggs.

  12. Scramble.

  13. Add chicken.

  14. Add cooked rice noodles.

  15. Pour in sauce.

  16. Toss.

  17. Warm 2 minutes.

  18. Garnish with peanuts and cilantro.

  19. Enjoy.
