Violations (Inspector Comments):

  • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

  • Bulk rice hopper doors are open and dirty mixing bowls and utensils are observed on the hopper lids exposing foods to contamination. (Corrected - dirty bowls and utensils were moved to ware washing area.)

  • Observed fountain soda syrup bag in box food stored directly on the floor in rear storage area, rather than 6 inches off of the floor as required. (Corrected.)

  • Cooked grilled chicken food was held at 96 degrees Fahrenheit, in the hot well located in the grill area, rather than 135 degrees or above, as required. (Corrected.)

  • Loose rubber door gaskets observed on the counter height freezer unit located to the left of the flat grill. Observed accumulation of frozen condensate on interior surfaces.

  • The quaternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was less than 50 ppm, rather than 200 - 400 ppm, as stated on the manufacturer's use directions. Provided training. (Corrected.)

  • Fountain soda dispensing nozzles, a food contact surface, was observed to have food residue and mold-like substance, and was not clean to sight and touch. (Corrected.)

  • Observed stovetop with an accumulation of dirt, food residue, debris on non-food contact surfaces.

  • Observed walk-in cooler shelving with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces.

  • Automatic paper towel dispenser at the preparation hand-wash sink had towels but was not dispensing. (Corrected.)

  • Light shield over vulcan hot hold has a very heavy accumulation of static dust.
