  • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

  • Observed unauthorized persons in the kitchen area. The Person in Charge failed to control access to food facility by unauthorized persons.

  • An open employee's beverage container was observed inside the sandwich make table, a food preparation area. (Corrected)

  • Vape smoker found on the slicer in the kitchen area during the inspection.

  • Cooked sausage, hamburger, cheeses, cut vegetable foods were held at 50-59 degrees Fahrenheit, inside the pizza bain marie cooling unit, rather than 41 degrees or below as required. Twenty-five pounds of food product was voluntarily discarded and valued by manager at $125. (Corrected).

  • Refrigerated ready-to-eat, time/temperature control for safety food (cooked chicken, pizza sauce, tuna salad etc.) prepared in the food facility and held for more than 24 hours, located in the walk-in cooler and bain marie units, is not being date marked. Provided training.

  • Commercially processed refrigerated, ready-to-eat, time/temperature control for safety food sliced cheeses and lunch meats, located in the walk-in cooler and bain marie units, and held more than 24 hours, is not being date marked with the date it was opened. Provided training.

  • Thermometers for ensuring proper temperatures of food are not available or readily accessible.

  • Observed children's reading books on floor and counter in the kitchen area.
