The old saying "Save room for dessert" couldn't be more true than on Thanksgiving when your turkey coma gives way to a pumpkin craving. Or apple pie. Or something different altogether like pumpkin cheesecake babka, gluten-free latte cake or bake-it-yourself cinnamon buns.

Go for something non-traditional this year with either apple or pumpkin pie hamantaschen cookies; pumpkin cheesecake babka; pumpkin cheesecake brownies; cinnamon flavored matzo toffee or a Thanksgiving box featuring 16 pieces of apple or pumpkin pie hamantaschen, full size babka (cinnamon or triple chocolate) and a half dozen black and white cookies. Baker De’Asia Collins, who's of Jamaican heritage, learned to cook these traditionally Jewish treats a few years ago, adding her own twists. Charlotte Boyle is a freelance fashion designer turned full time baker thanks, in part, to the pandemic. Now the British native has a thriving business, infusing her love for design into mini, midi and maxi cakes, giving you options for small, medium and large desserts. Many of her items (but not all) are gluten-free and vegan. This four-month-old shop (they opened July 1) features a range of desserts for every palate including something for those who are gluten-free. There's your ever classic pumpkin pie along with dulce de leche apple pie; maple bourbon pecan pie; corn coconut custard pie; cranberry pumpkin loaf cake; fudge brownie shortbread cookies and a gluten-free almond pear cake. Thanksgiving is all about friends and family and this sweet potato pie, created from an old Southern recipe passed down to Gay Wheeler-Smith from her great-grandmother is all about both. The New Rochelle resident owns the company with her good friend Kecia Palmer-Cousins of Peekskill. Together, the two also sell sweet potato tarts and cookies (think oatmeal raisin and chocolate chip) as well as a sweet potato pie mix, all of which can be ordered online. Not in the head space yet to think T-day turkey let alone dessert? No worries. Galloway's Bakery in Scarsdale, known for its old-fashioned pies, tarts, cakes, cookies and doughnuts, doesn't take orders. Even better for last minute procrastinators: it's open Thanksgiving eve from 7 a.m. to 7 p.m. and Thanksgiving day, from 8 a.m. until noon.
