Whatever your heart desires! The only thing to learn here is the technique of chopping everything all together but the things you chop are up to you. Working at an Italian deli for 3 years, I learned a thing or two about a good meat and cheese mix. If you’re short on ideas, feel free to use these combos to get your imagination going and create your ultimate chopped sandwich:

– Spicy: hot soppressata, capicola ham, pepperoni, and hot pepper cheese

– Classic: Genoa salami, mortadella, sweet soppressata, and provolone

– Ham lovers: Capicola ham, prosciutto, speck, and smoked mozzarella

Ingredients

  • 4 oz.

    Black Forest or capicola ham, sliced

  • 4 oz.

    provolone cheese, sliced

  • 2 oz.

    genoa salami

  • 2 oz.

    hot soppressata or pepperoni

  • 1

    Roma tomato, sliced

  • 1/2

    small red onion, thinly sliced (about ½ c)

  • 1 c.

    shredded romaine lettuce

  • 1/3 c.

    sliced roasted red peppers

  • 1/4 c.

    sliced drained pepperoncini

  • 1/3 c.

    mayonnaise

  • 3 tbsp.

    store-bought or homemade pesto

  • 2 tbsp.

    red wine vinegar

  • 3/4 tsp.

    kosher salt

  • 1/2 tsp.

    onion powder

  • 1/2 tsp.

    Italian seasoning

    onion powder

  • 1/2 tsp.

    freshly ground black pepper

  • 2

    (10”) ciabatta rolls, toasted

Directions

  1. On a large cutting board, chop ham, provolone, salami, soppressata, tomato, onion, lettuce, red peppers, and pepperoncini with a sharp knife, tossing as you go, until bite-sized pieces form.

  2. In a large bowl, combine mayonnaise, pesto, vinegar, onion powder, and Italian seasoning; season with salt and pepper and stir to combine. Add chopped mixture and toss with a spatula or spoon until coated.

  3. Distribute chopped mixture between rolls. Cut each roll in half.
