Ingredients

Salmon

  • 1/3 cup low-sodium soy sauce

  • 1/3 cup extra-virgin olive oil

  • 1/4 cup chili garlic sauce

  • Juice of 1 lime

  • 2 tbsp honey

  • 4 cloves garlic, minced

  • 4 (4-oz.) salmon filets

Pickled Cucumbers

  • 1/2 cup rice vinegar or rice wine vinegar

  • 1 tbsp granulated sugar

  • 1 tsp kosher salt

  • 2 tsp toasted sesame oil

  • 1 English cucumber, thinly sliced

Spicy Mayo

  • 1/2 cup mayonnaise

  • 2 tbsp sriracha

  • 2 tsp toasted sesame oil

Bowls

  • Cooked brown rice

  • 1 avocado, sliced

  • 1 medium carrot, grated

  • 1/2 red onion, thinly sliced

  • Cilantro leaves, torn

  • Sesame seeds

  • Nori sheets

Salmon

  1. Preheat the oven to 350° Fahrenheit and line a large baking sheet with parchment paper.

  2. In a medium bowl, whisk together soy sauce, olive oil, chili garlic sauce, lime juice, honey, and minced garlic.

  3. Add the salmon to the sauce and gently toss to combine.

  4. Place the salmon on a prepared baking sheet and bake until it’s fork-tender for 20 to 25 minutes.

Pickled Cucumbers

  1. In a microwave-safe bowl, whisk together vinegar, sugar, and salt.

  2. Microwave the sauce for about 2 minutes, or until sugar and salt are dissolved.

  3. Stir in sesame oil, then add cucumbers and combine with a spatula.

  4. Cover with a tight-fitting lid or plastic wrap until ready to use.

Spicy Mayo

  1. In a small bowl, combine mayonnaise, sriracha, and sesame oil.

Avocado Prep

  1. Cut the avocado lengthwise.

  2. Remove the pit and use the avocado slicer to slice the avocado one half at a time.

  3. Reserve the avocado slices for plating.

Assemble Bowls

  1. Divide rice among 4 bowls.

  2. Top with salmon followed by pickled cucumbers, carrot, avocado, red onions, cilantro, sesame seeds, and nori sheets.

  3. Drizzle with spicy mayo, and serve!
