Sunny’s Pizzeria paves the way for Salas Salsas' growing business, new restaurant

Pizza pub Sunny’s Pizzeria announced Monday on social media that after two and a half years, this will be their last week serving pizzas at the EightyOne Arcade in Downtown Sioux Falls.

In the post, Sunny’s, located on 26th Street and Waltz Avenue across from University of Sioux Falls, assured that they would still provide their signature “jowl-droppin’” thin crust pizzas to their wholesale partners in Sioux Falls and the surrounding area, which includes WoodGrain Brewing Co., Glacial Lakes Disterelly & Brewhouse, The Orion Pub, Lupilin Brewing, The Bunker in Harrisburg and Jefferson Beer Supply in Jefferson, SD.

Sunny’s also stated the company hopes to announce by next week a new wholesale retailer.

Sunny’s co-owner Jon Oppold said in his “bittersweet announcement” they will be parting ways with Sioux Falls’ largest arcade bar, EightyOne Arcade, on good terms, to make way for a new downtown Mexican restaurant.

For more than a year, Sunny’s Pizzeria has been sub-leasing its kitchen at the arcade to the food truck and catering business Salas Salsas, a family-owned business run by Marcela Salas, her mother Patricia Burbine and her fiance Chris Nelson.

Now, what began as a “small batch salsa company” selling its product in summer 2020 at the Brandon Farmers Market, will be expanding even more by opening its restaurant, BibiSol Bodega + Provisions. The upcoming business will be in the space previously occupied by Mrs. Murphey’s Irish Gifts in the Carpenter Building downtown.

“In the time that we’ve shared the kitchen, you could see them build on their success little by little, and it was evident that as their ingredients and equipment slowly started to take over the space,” Oppold shared. “Last fall, I could see that it was time for me to get out of their way, so they could spread their wings and fly.”

Oppold connected with Marcela and Patrica through Startup Sioux Falls in 2022. Oppold was set up as a mentor to the mother/daughter duo as they were looking to lease a commercial kitchen to prep for their “ever-expanding food truck and catering business.”

“The stars aligned perfectly for us, as Sunny's only utilized the kitchen at EightyOne after five o'clock at night and Salas Salsas needed a space they could use during the day - it was fate!" Oppold stated. "I clicked immediately with the Salas Salsas team and we've been friends and colleagues ever since!”

The authentic Mexican restaurant will have a grand opening in mid-May to early June this summer. They will still be able to use the kitchen space at EightyOne Arcade, now with a hallway connecting the two spaces.

“Jon has been gracious enough to kind of just let ur flourish,” Salas said. “He has been the best mentor and friend that we could have asked for.”

Oppold said he could not be more excited for BibiSol to open, and that “you won’t find a more genuine, caring and fun-loving trio than them.”

“I’ll be there on day one to buy a tamale and wash it down with a beer,” Oppold said.
