When it comes to beef dishes in Palm Beach, one in particular rarely fails to be a showstopper.

That it may have been named after Napoleon-vanquisher the Duke of Wellington is the last thing anyone thinks about when enjoying this dish featuring beef filet cradled in a decadent minced-mushroom mixture, foie gras and buttery, golden puff pastry.

Yes, beef Wellington has long been reserved for special celebrations, but not anymore — at least not at La Goulue in Palm Beach.

Not only is executive chef Gwen Le Pape now featuring beef Wellington every Tuesday during dinner service at the French bistro, 288 S. County Road, but he also has amplified its luxe nature by adding truffle in various ways.

The dish ($85 a person) is carved and served tableside, plated with French string beans and blistered cherry tomatoes. A truffle-accented au jus finishes the dish.

The beef Wellington special at La Goulue is slated to continue each Tuesday through the summer. To guests who plan on enjoying it, La Goulue managers recommend pre-ordering beef Wellington when you make reservations.
