‘Several priority violations.’ Warner Robins restaurant fails routine health inspection
A Houston County restaurant failed its routine health inspection in late November but bounced back two days later with a perfect score.
Calvillo Mexican Grill at 1224 Russell Parkway received a “U” for “unsatisfactory compliance” with a score of 60 on Nov. 28, according to what was reported Friday in the Georgia Department of Public Health’s online portal.
The restaurant came back with an “A” for “food safety excellence” two days later at its required follow-up inspection with a perfect score of 100.
This was the first routine inspection for the Calvillo Mexican Grill, formerly El Jalisciense Mexican Restaurant. Calvillo Mexican Grill scored a 100 on its Sept. 29 initial inspection required before opening.
State health inspectors assign grades based on how many points are deducted from 100, with scores of 69 and below considered failing. Follow-up inspections are required when a restaurant fails its routine inspection and generally take place within 10 days.
Most other Houston County restaurants earned “A’s” on their routine inspections Nov. 1-30, including more than 30 with perfect scores of 100. A dozen earned “B’s” and five received “C’s.
Failing grade
Calvillo Mexican Grill had “several priority violations,” the health inspector noted in the Nov. 28 inspection report.
The violations were related to required hot and cold temperatures that food should be kept at before serving as well as issues related to the prevention of cross contamination for ready-to-eat foods. The requirements are designed to reduce the risk of foodborne illnesses.
The health inspector found that the person in charge was not ensuring that employees were holding time/temperature for the safety of foods at appropriate temperatures, according to the inspection report.
The health inspector also witnessed an employee “grab raw chicken and raw shrimp then proceed to flip a tortilla on the grill with the same gloves,” the report reads.
The health inspector also saw an employee place ready-to-eat shredded lettuce into another food container “bare handed,” according to the report.
The health inspector also found several cans of food damaged or severely dented on the food storage rack, according to the report.
Additionally, shredded lettuce in a prep top cooler was being held at a higher temperature than required for food safety and cooked rice inside a steam well was being held at a lower temperature than required for food safety, the report said.
Also queso and cooked beef in a reach-in cooler did not have a date by which the food should be consumed, according to the report.
The health inspector also noted in the report that several chemical bottles were unlabeled throughout the kitchen.
“Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material,” the report reads.
Additionally, the health inspector observed several food containers on the storage rack stacked wet. The containers should be dry before contact with food, according to the report.

A “U” for ``unsatisfactory compliance” is given when a restaurant scores a 69 or less.
