Inspector Notes: Observed multiple drink bottles stored around kitchen (soft drinks and water). Also, observed employee food stored in prep cooler (apple). Improper cooling temperature for chicken. Chicken was cooked at approximately 9:00am, at 2:30 was still between 70 and 77 degrees F. Had PIC recook chicken to where it held at a temperature of 165 degrees F for 15 seconds. Observed no visible means of cooling or temperature control.

Inspector Notes: Observed raw chicken stored next to cooked lamb, and raw lamb chops stored next to calamari in reach in cooler in main kitchen. Observed multiple cooked TCS items throughout the facility not labelled or date marked (beef stew, pasta, cooked lamb, cooked chicken, cooked rice). When inquired about the dates items were cooked, employees stated that it was done on Tuesday. Observed scoop handle to be stored in contact with sugar in the dry storage room. MIYA BUFFET, 120 TOWNE CENTER DRIVE, SUITE 100 POOLER, 80

Inspector Notes: Observed manager wash a knife in prep sink with soap and water and then place knife on knife rack. Observed chemical sanitizer in warewasher not functioning properly with a 0ppm concentration. Observed facility does not have a menu nor does it have a consumer advisory for their buffet (served raw seafood). Observed previously frozen fish that was completely thawed kept in the vacuum seal. Observed 2 handwashing sinks without any signage. Observed cup being used as a scoop in flour. Observed spoon in seasoning with handle immersed in seasoning. Observed single service to go containers on box on floor in bar area. Observed old food debris on burners, in gaskets on doors of reach-in coolers, on racks in kitchen and in racks in walk-in coolers. Observed black mildew-like substance in and around handwashing sinks. Observed grease build-up on hoods and pipes in kitchen area. Observed dried food debris on walls and floor of facility. Observed back metal door degraded with a sizable gap on bottom of door.
