Restaurant inspections: Moldy strawberries, old ranch, grimy hot dog roller in Wichita KS
Four Wichita-area restaurants and a high school were out of compliance during Kansas Department of Agriculture food safety and lodging inspections conducted Feb. 5-11.
Information about the Sedgwick County businesses and their violations, compiled Feb. 16, appears in an alphabetical list below with a summary of the problems inspectors noted on their reports. More details are posted in The Eagle’s searchable database of non-compliant restaurant and hotel inspections at www.kansas.com/databases.
More than 40 establishments passed their inspections with few or no violations that same week. Those also appear alphabetically below. Some may have appeared on a prior non-compliant inspection list.

Failing an inspection doesn’t necessarily mean a business has to close; that’s rare. Most violations are minor and are corrected as an inspection is taking place.
Businesses fall out of compliance with state rules when they have too many violations, issues that can cause foodborne illnesses or when a problem can’t be fixed right away, such as pest infestations or broken plumbing.
When a business fails, it’s usually inspected again within 10 days.

Out-of-compliance inspections
Abuelo’s Mexican Restaurant, 452 S. Ridge Road in Wichita — Six violations during a Feb. 7 routine inspection. Cited over chipped and cracked spatulas, frozen sea bass thawing in intact vacuum packaging, old southwest ranch and salsa, no sanitizer in dishwasher, missing records, pans with sticker residue on them were in clean storage, dirty can opener. Next inspection: Feb. 17.
Dog-N-Shake, 4323 S. Seneca in Wichita — Three violations during a Feb. 9 inspection prompted by a complaint. Cited over temperature of blanched fries that would be used during the lunch rush, restaurant couldn’t find its probe-style food thermometer, hot dog roller not in use “had a build up of grease, grime, and other food debris. Next inspection: Feb. 19.
Slim Chickens, 2313 N. Greenwich Road in Wichita — Five violations during a Feb. 8 routine inspection. Cited for using a paint mixer that isn’t food grade to mix ranch, corroded and leaky valves at soda carbonator station, no hot water at women’s and family restroom sinks, dirty lids were in clean storage, ranch and cayenne ranch sauces were sitting out at room temperature, buttermilk was sitting out at room temperature. Next inspection: Feb. 18.
Uno Mas Fresh Mex, 3242 N. Rock Road in Wichita — Seven violations during a Feb. 9 routine inspection. Cited for not labeling can of whipped cream with opening date, raw eggs stored on top of box of tortillas, hot dogs weren’t labeled with date they were removed from freezer, moldy strawberries, shredded cheese and salsa weren’t kept cold enough, cook didn’t change gloves or wash hands after touching raw hamburger, refried beans weren’t kept hot enough in steam table, old jalapeno salsa. Next inspection: Feb. 19.
Wichita Heights High School, 5301 N. Hillside in Wichita — Four violations during a Feb. 6 routine inspection. Cited for not labeling salsa with preparation date, not enough sanitizer in dish sink, salsa wasn’t kept cold enough, no testing strips to measure the concentration of chlorine sanitizer. Next inspection: Feb. 16.
