Inspector Notes: Observed dish washer sanitizer levels at 10ppm. RCA: PIC shall have staff use 3-compartment sink for washing, rinsing, and sanitization of dishware. Observed serval items not date marked within the reach-in coolers: cooked shrimp, cooked duck, and prepped veggies (cucumbers, cabbage). CA: PIC had staff place date labels on food items. Observed beef balls and cooked duck dated for 2/12 and held past 7 days. CA: PIC discarded food items. Observed cooked chicken cooling at room temperature. Observed previous inspection report not posted in plain view and behind other signage. RCA: New inspection report shall be posted in clear view. Observed hot water in the restroom unable to maintain 100F. Temperature wiuld temporarily increase and decrease down to ~60F.
