Restaurant inspections: Cockroach in mixing bowl, pig blood over fruit, mice in Wichita KS

Eleven Wichita-area restaurants and other businesses were deemed out of compliance during Kansas Department of Agriculture food safety and lodging inspections conducted Dec. 4-10.

Information about the Sedgwick County businesses and their violations, compiled Dec. 16, appears below with a summary of the problems inspectors noted on their reports. More than 60 businesses surveyed Dec. 4-10 passed their inspections with few or no violations. You can see those at www.foodsafety.kda.ks.gov/FoodSafety/Web/Inspection/PublicInspectionSearch.aspx.

Failing an inspection doesn’t necessarily mean a business has to close; that’s rare. Most violations are minor and are corrected immediately during an inspection.

Businesses fall out of compliance with state rules when they have too many violations or certain types of problems that can increase the risk of a customer contracting a food-borne illness and also when a problem can’t be fixed right away, such as pest and plumbing issues.

When a business fails, it’s usually inspected again within 10 days.

Recent out-of-compliance inspections

Bingo Royale, 420 E. Grand in Haysville — Three violations during a Dec. 5 routine inspection. Cited for not labeling ham with package opening date, no food thermometer, hand-washing sink is filled with wiping cloths. Next inspection: Dec. 15.

Bionic Burger, 2404 S. Meridian in Wichita — Two violations during a Dec. 6 inspection prompted by a modified complaint. Cited for storing baskets of blanched fries and about 50 raw hamburger patties at room temperature. The restaurant told the inspector the items would be used during the lunch rush. Next inspection: Dec. 16.

Bionic Burger, 660 N. Ridge Road in Wichita — Three violations during a Dec. 8 routine inspection. Cited for not labeling blanched French fries with their discard time, raw hamburger patties weren’t stored in a food-grade container, no testing strips on site to measure strength of sanitizer. Next inspection: Dec. 18.

Braum’s Ice Cream and Dairy Store, 1261 S. Rock Road in Wichita — Three violations during a Dec. 9 inspection prompted by a complaint. Cited over a dirty food slicer, no paper towels at hand-washing sink, “approximately 15-20 small flying winged insects throughout the building” including by floor drains and the soda fountain in the lobby. Next inspection: Dec. 19.

Buffet City, 601 N. West St., Ste. 206 in Wichita — Eight violations during a Dec. 6 routine inspection. Cited over a cook who didn’t wash hands after handling raw food, BBQ sauce stored in containers that weren’t food grade, cracked pans, dirty food slicer, no paper towels at hand-washing sink, mouse droppings around flour and sugar in kitchen storage, unlabeled chemical bottle in smoker cabinet, spray can of pesticide stored on site wasn’t food grade. Next inspection: Dec. 16.

Fujisan Sushi, 3084 N. Maize Road in Wichita — One violation during a Dec. 7 routine inspection. Cited over a pH meter that didn’t work properly. The meter is used to measure the acidity of sushi rice. Next inspection: Dec. 17.

Great Wall Chinese Restaurant, 360 N. Main, Ste. 700 in Haysville — Ten violations during a Dec. 5 routine inspection. Cited over an employee who cooked food without washing hands after pushing garbage down in trash can, raw chicken stored above potstickers and other foods including shrimp and noodles, raw beef stored above container of cooked chicken, fried rice wasn’t kept hot enough, cooked rice and chicken weren’t kept cold enough, cabbage and garlic weren’t kept cold enough, dirty meat cutter, restaurant rinsed meat cutter under running water to clean it but didn’t wash or sanitize it, plumbing issue, floors are soiled with dirt and food, unlabeled chemical bottle. Next inspection: Dec. 15.

Sabor Latin Bar & Grill, 309 N. Mead in Wichita — Nine violations during a Dec. 7 routine inspection. Cited for not keeping the shell stock tag for fresh mussels, throwing away shell stock tags for items sold over the past 90 days, raw marinated chicken stored in open pan above raw pork and beef, queso sauce wasn’t kept cold enough in refrigeration, cheese cakes weren’t labeled with package opening dates, old pork, dirty pans, live cockroach in mixing bowl, unlabeled chemicals. Next inspection: Jan. 6.

Smoothie King, 8000 W. Central, Ste. 500 in Wichita — Four violations during a Dec. 8 routine inspection. Cited for storing scoops inside protein powders and sugars, greek yogurt wasn’t cold enough in refrigeration, old oat milk, probe-style food thermometer didn’t work. The business passed a Dec. 12 follow-up inspection that was held remotely by phone.

Thai Binh Supermarket, 1530 W. 21st St. in Wichita — Five violations during a Dec. 6 joint inspection. Cited three times for not keeping the identification tags for shellfish sold in business, storing pallet of pig blood over rambutan fruits, packages of raw meat weren’t labeled. Next inspection: Jan. 6.

Wendy’s, 3601 E. Harry in Wichita — Three violations during a Dec. 8 routine inspection. Cited over refrigerated foods including cheeses and produce that were not kept cold enough, tomatoes weren’t labeled with discard time, dirty tomato slicer. Next inspection: Dec. 18.
