Reservoir to open Memorial Day in former Ottawa Beach Inn

HOLLAND — A new restaurant near Holland State Park will open at 8 a.m. Monday, March 27.

The eatery, Reservoir, is located at 2155 Ottawa Beach Road in the former home of Playa Tacos and Tequila and Ottawa Beach Inn.

It’s been a quick turnaround for new owners Corina Sepsakos and her husband Vasilios, who also own Brick and Porter and Brickyard Tavern in Grand Rapids. They signed the lease March 1 and announced plans for the space in April.

It’s meant long hours for the couple and their team, but they're ready now to serve the community.

“There's been a lot of help along the way from family and friends," Corina said.

Reservoir is intended to call-back to the comfort food of Ottawa Beach Inn. It will have an Italian-focused menu, including seafood and pizza. The restaurant will serve breakfast, lunch and dinner with late night options, plus vegetarian and vegan dishes.

“We’ve put a lot of time and effort into creating a menu that will have something for everyone,” Corina said. “We're going to open with a smaller portion of the menu to start and expand, because when we do something we want to do each item well.”

Ottawa Beach Inn closed in early 2022 in preparation for an extensive renovation and rebranding as Playa Tacos and Tequila after owner River and Odi Hospitality Group decided the restaurant needed a new look and concept to stay competitive.

In December 2023, Playa announced plans to close for the winter season. Two months later, the restaurant was on the market, along with others owned by River and Odi in Saugatuck.

Corina said they continue to listen to community members on the menu, and plan to cater to the town in the off-season with classics similar to what Ottawa Beach Inn offered in the past.

“We’ve had a lot of emails come through about what people miss and want to see and it’s all catalogued,” she said. “We're excited to do that and work with the community on that.”
