Innovative Dining Group has a strong representation in its native Southern California and Las Vegas, with its stylish Japanese steakhouse and sushi concepts, and now the group is expanding to Texas for the first time.

Sushi Roku will open Saturday at 405 Colorado St. (at the corner of Fourth Street) at the bottom of the new 405 Colorado tower, adding yet another out-of-town brand to a continually changing downtown.

The kitchen is led by executive chef Sang Kim, former chef-owner of Kai Sushi in Leander. The sleek, modern restaurant will feature a menu of sushi, sashimi and izakaya-style bar food rooted with a Western flair. Signature menu items include Hanabi (crispy rice topped with spicy tuna and avocado) and a baked crab roll served with truffled Brussels sprout chips.

This will be the seventh location of the restaurant which originally opened in Hollywood in 1997. Sushi Roku joins a downtown sushi scene that includes the recently opened Uchiba, Ra Sushi Bar, Maiko Sushi Lounge, Sushi Junai and Ten Ten.
