Warm weather calls for frozen snacks! In this episode of ITK: Eats, we show you how to make mochi ice cream bars. Made with coconut custard, these mochi bars are perfectly chewy and sticky. Plus, they’re filled with ice cream inside, making them the perfect summer dessert. Here’s how to make mochi ice cream bars:

Ingredients
¾ cup unsweetened coconut milk
1 cup whole milk
2 large eggs
4 tablespoons unsalted butter, melted and cooled
1 cup sugar
½ teaspoon vanilla extract
8 ounces sweet rice flour
1 teaspoon kosher salt
½ teaspoon baking powder
¾ cup sweetened shredded coconut
Ice cream
Instructions
1. Preheat the oven to 350 degrees and line a square baking dish with parchment paper.
2. In a large bowl, whisk together coconut milk, whole milk and eggs until combined. Then, add in butter, sugar and vanilla and continue to whisk. Sift in rice flour, salt, baking powder and whisk until combined. Then, fold in shredded coconut.
3. Pour into the baking dish and bake for 50 minutes.
4. Once cooled, cut it in half widthwise and scoop softened ice cream onto one half. Place the other half on top of the ice cream to create a sandwich. Freeze for one hour, then cut into rectangular bars.
