Mmm... cookies, cakes and pie: Popular bakery nearly ready to reopen in Fairview Heights

Lizzie Bob’s Bakery in Fairview Heights closed their location at 823 Lincoln Highway back in May so they could prep their new, more spacious digs across town at 5500 N. Illinois St.

And owner Elizabeth Toepfer is very close to reopening at the bakery’s new location.

Toepfer said in a phone interview that she and husband Bob Toepfer are putting the finishing touches on the place (affixing baseboards, hanging doors) and getting ready to bring in the equipment.

They passed fire and plumbing inspections on Wednesday, according to Toepfer, and still have the building inspection ahead of them. When that’s passed and an occupancy permit is in hand, it’ll be time to move in.

Once moved in, a routine health inspection will take place.

Then Lizzie Bob’s Bakery will open for business. An official date has not been set, but keep an eye on the bakery’s social media and website.

Until then, Toepfer is accepting orders for baked goods including cupcakes, cake pops, energy bites, pies and Bob’s breads.

Orders can be placed through the website at lizziebobsbakery.com under “Contact us.” Let Toepfer know what items are needed and on what day; an invoice will be sent and arrangements made for order pick up.

Customers can also find Lizzie Bob’s baked goodies at the Maryville and Herald Square farmers markets. The Mobile Bakery will be at the Maryville Farmers Market Thursday, July 21, and at Herald Square, Thursday, July 28.

The Mobile Bakery is currently scheduled to attend events through October with more to come. Event dates for the Mobile Bakery can be found on the bakery’s website.

Known for their made-from-scratch baked goods, Lizzie Bob’s Bakery will have a lot for customers to look forward to.

Toepfer said they will continue to off their freshly-baked cinnamon rolls (regular and gluten-free) and pecan sticky buns every Saturday at the bakery .

Dining in will be an option for customers. The menu will be expanded to include additional items such as sandwiches and pizza.

Toepfer has also been adding more gluten-free options to the menu: breads, cookies, cakes and brownies.

Their new kitchen is large enough for them to have a dedicated gluten-free area, free of regular flour with separate mixers and utensils to prevent contamination.

She’s also working on more dairy-free recipes for the bakery, including a dairy-free key lime pie similar to one she said she enjoyed in Florida. (There’s a photo and post about it on the Facebook page too.)

Toepfer plans to add classes as well.

“I love to teach,” she said, mentioning that she once taught a pie-making class at the University of Missouri-St. Louis.

Toepfer hopes to start holding classes at the bakery as soon as next month. She said she’ll likely start with sugar cookie and cupcake decorating and later work up to six-inch cakes.

Seasonal and holiday themes will be added later in the year.

When Toepfer is ready to start classes, registration will be available on the website. Each class will include up to 10 students.

Lizzie Bob’s Bakery is located at 5500 N. Illinois St., Suite C, in Fairview Heights.

Once open, hours of operation will be 8 a.m. to 3 p.m. Tuesday-Friday and 8 a.m. to noon Saturday.
