New food truck opens in Bellingham, offering late-night burgers, special fries and sauces

A new food truck is joining Bellingham’s diverse food scene, offering late-night burgers, specialty fries and sauces.

Doug’s Burgers announced its soft opening on Instagram, along with its current menu and journey to opening.

“I worked on a few friends’ trucks in Houston, and had a pop up tent for awhile. I was going to have my first truck there but wanted to give Bellingham a late-night option after visiting family. I named it after my dog, if everyone visited as hungry as him I would definitely sell out immediately,” Doug’s Burgers’ owner and cook Matt King wrote in an email to The Bellingham Herald.

The food truck serves a simple menu of three burgers and three fries, along with three dipping sauces, although not all menu items are currently offered.

King said he hopes to bring value to Bellingham by providing a “consistently open late night option, at a price everyone can afford, with thoughtfully sourced beef,” King wrote.

“We will always be thoughtful in sourcing our beef. Which I find important to not use feedlot cattle. Of course we can’t get everything from the farmers market with burgers under $10, but we will always show care to the things that matter,” King wrote.

King also has hopes of expanding the business over time and teaming up with other local food trucks and entrepreneurs.

“I currently cook on tugboats out of Seattle headed up to Alaska, and will open in between trips. Hopefully business is good enough that we can open full time soon,” King wrote. “I would actually like to work with the other caterers and food trucks in the area to start a food park, and have some rentable trucks for visiting chefs or people that would like to try it out.”

The food truck is open through Nov. 13 for its soft opening from 6 p.m. to 2 a.m. Wednesday through Saturday at 1301 N State St. in Bellingham, near Umpqua Bank.
