Simmering broth, fresh vegetables and juicy meat are all part of the all-you-can-eat deal at this Japanese hot pot restaurant in Washington.

Shaburina in Redmond was named the top buffet in the state, according to a list released by Yelp on Oct. 10.

“We love a good hot pot place, but this spot is NEXT level,” one Yelp reviewer wrote.

The report includes all-you-can-eat restaurants that serve varying cuisines, including Thai, Chinese, Indian, Brazilian, American and Hawaiian.

To find the best buffet restaurant in every state, Yelp looked at businesses in the food and restaurant category that had a large number of reviews mentioning “buffet.” Then each place was ranked based on the total volume and ratings of the reviews.

Shaburina serves shabu shabu, which is a Japanese hot pot dish. It includes thinly sliced pieces of tender meat, fresh vegetables and dipping sauces.

But unlike other hot pot dishes where all the ingredients are cooked together in a pot of broth, shabu shabu is “cooked bite-by-bite over the course of the meal,” the restaurant said on its website.

Diners can choose from five types of broth for their hot pot. For meat, the restaurant offers a premium course with wagyu beef and kurobuta pork, or a house course including beef and pork.

And the buffet tables offers fresh vegetables, noodles and frozen meats.

Then each diner has their own pot of hot broth to cook their meat and vegetables in at their table.

“The ingredients were fresh, the meats were soft and juicy, and the ice cream at the end was a nice cherry on top.”

Several reviewers recommended trying Shaburina’s spicy miso broth, with one reviewer describing it as being “savory with a kick of heat.”

Redmond is about 15 miles northeast of Seattle.
