News of public record: Guernsey County restaurant inspections

The following are restaurant inspections with critical violations, as conducted by the Guernsey County Health Department from April 8 to 12.

April 8

Subway of Cambridge, 1710 Southgate Parkway, Cambridge. The person in charge (PIC) is unable to demonstrate knowledge of the storage and use of toxic materials. The PIC present was not able to produce pest control records indicating past treatment schedules or pesticides applied. Sliced deli ham in the sandwich prep line cooler was observed with an internal temperature of 53 F. A small spray bottle of what PIC identifies as glass cleaner was not labeled with the common name of its contents. A leaking container of liquid ant bait was observed in the cabinet below the soda dispensing machine where single-use containers are being stored. A working container of glass cleaner was stored on a baking tray.

Rasor's Drive-In, 267 W. Main St., Byesville. The handwashing sink in the front service area is being used to wash milkshake tins. Between uses, milkshake tins are being rinsed only at the sink in the front service area. The ground beef mixture in the hot-holding unit was 129 F. Cut lettuce was stored on the counter, not under refrigeration, with an internal temperature of 51 F.

Orr's Drive-In, 60200 Southgate Road, Byesville. The PIC is not ensuring employees are properly sanitizing equipment and utensils and monitoring sanitizer parameters. The PIC did not ensure employees were effectively cleaning their hands as required. The PIC did not ensure employees were properly maintaining the temperatures of foods during hot and cold storage. Employee observed washing hands in a three-compartment sink. Several employees were observed switching tasks between washing dishes, and handling raw meat and ready-to-eat food and did not wash hands before putting on gloves. French fries and strawberry topping were uncovered. Food in the countertop refrigeration unit and on the counter was also uncovered. Observed employee washing dishes in the middle compartment, but did not sanitize dishes afterward. Food was being reheated on a warmer and registered 65 F. Food must be reheated to at least 165 F before being placed in the hot holding unit. Food on the hot holding unit registered below 135 F. Chopped tomatoes and whipped cream on the counter registered 54 F and 63 F. Eggs sitting on the counter registered 54.7 F. Cheesecake was not date marked. The right side compartment for the potato machine on the three-compartment sink is not air-gapped.

April 12

Buckeye Trail Middle School, 65553 Wintergreen Road, Lore City. Cooked broccoli on the service line was observed hot holding at 118 F. Blue dish detergent was observed stored near the three-compartment sink in a squeeze bottle not labeled with the common name of its contents.

Premiere Theater, 2125 Larrick Road, Cambridge. A large number of rodent droppings and nesting material were observed in cabinetry below the soda dispensing machine and Icee machine.
