If You Can't Take the Heat, You Can Stay in the Kitchen After All

We've entered the warmer months, which means the days of baking cookies, simmering stews, and putting hearty casseroles in the oven are temporarily on hold. Well, at least for the people who don't want to crank their AC up just to withstand the heat in their kitchen. That doesn't mean your sweet tooth has to rely solely on ice cream, though (although it is that time of year, too). These no-bake cookie recipes offer you a delicious opportunity to keep your cool and get a sugar fix.

Classic No-Bake Cookies

You can't go wrong with a classic no-bake. These are chewy, light, and full of chocolate and peanut butter flavors. Plus, they're one of the easiest cookies to make and one of the hardest to mess up.

Peanut Butter No-Bake Cookies

If you're not feeling the classic chocolate, this all-PB spin on no-bakes is also a solid go-to. Oatmeal-based cookies can become pretty dry, but the peanut butter in these bad boys keeps them nice and creamy.

No-Bake Coconut Praline Cookies

Pecans and coconut are one of those rich, decadent flavor combinations that's pretty much a win every time. And while we're a little tempted to drizzle some melted chocolate on these after making them, we have to say, this recipe sounds scrumptious as-is.

Lemon Oatmeal No-Bake Cookies

This one surprised us because we don't often combine oats and lemon, but holy moly, this sounds like the epitome of summer in a cookie. Instead of using an actual lemon, the recipe calls for a packet of lemon pudding mix, which we know will provide plenty of flavor and some velvety texture.

Avalanche Cookies

Avalaaaaaaanche! Sorry, we couldn't resist. While you might now be picturing snow rolling down a mountain in a colossal wave, set your mind instead on a creamy and delectable Rice Krispie-style cookie dollop packed with white chocolate, peanut butter, mini marshmallows, and chocolate chips.

No-Bake Samoa Cookies

Samoas are the superior Girl Scout cookie (even though my fellow Cheapism writer, Lacey Muszynski ranked them third on her round-up — eye roll). Chocolate, caramel, coconut — oh baby. These are super easy, too, because the base is actually a package of Fudge Stripe cookies. Bonus points for that!

Does anyone else picture a crazed Sesame Street character covered in blue fur and cookie crumbs every time they hear the term "monster cookie," or am I alone there? Anyway. No-Bake Oatmeal Scotchies

Preacher Cookies

Take us to church, preacher cookies! These are basically just a backward version of the traditional no-bake: peanut butter topped with melted chocolate. Amen.
