It looks and mostly feels like the traditional propane backyard grill, with the two-wheeled cart and two independently controlled cooking areas, but it provides a flat top cooking surface, expanding the cooking potential to many items you may not think to cook out back. Pancakes, eggs, a smash-style cheeseburger or sauteed veggies are a few that come to mind right away.

Blackstone goes into great detail about the difference between cooking on a griddle cooktop and a standard grill, but mostly it comes down to personal preference. Many think using a griddle cooktop might give a larger margin for error, so if you have any experience cooking on a stove, you're all set to cook on a griddle. Using a grill may require a bit of practice before you really get the hang of it. Important to note, griddle-cooked food won't have the smoky flavor or those eye-catching grill marks, but you'll have more flexibility in terms of heat.

These griddles are fairly new —Weber also has a 28" version worth checking out — so we're just starting to see them discounted; that's why this $197 price tag for the Blackstone is quite the steal.
