New Johnson County coffee shop to open this summer: Lattes, paninis, avocado toast

Grand Coffee Co. — a coffee shop at 2345 Grand Blvd., Suite A — will soon open a new location in Shawnee.

The Italian coffee shop, selling avocado toast, matcha and more, will take over a Scooter’s location at 10610 Shawnee Mission Parkway. Owner Salvatore Silvio said he’s aiming to open the Johnson County location in July.

Scooter’s will close late this month.

“We know Kansas needs more specialty coffee, so we’re excited to get to know the Kansas side,” Silvio said. “Hopefully they’ll welcome us in.”

Grand Coffee roasts its own coffee beans and makes most of its pastries and food in-house. Silvio said he tries to put an “Italian twist” on his menu items, putting tomato Alfredo sauce and roasted red pepper garlic sauce on their breakfast paninis.

He sells all the typical specialty coffee drinks: cold brew, hot lattes, tea, etc. Their Grand Roast, a blend of Brazilian, Colombian and Guatemalan beans, has notes of chocolate and maple syrup.

Grand Coffee opened its first location near Crown Center in January of last year. Silvio had worked at other coffee shops before deciding to launch his own.

“First year of business, definitely some ups and downs, but overall can’t complain,” he said. “We’re looking forward to taking on another challenge.”

The new location will also have a drive thru, thanks to its predecessor.

There are few other local coffee shops in Shawnee, though nature-themed Station 3 just opened in an old fire station at 19115 Midland Drive.

Months before that, Gallagher’s reopened after a two-year hiatus at 22742 Midland Drive.
