Giada De Laurentiis Just Shared Her Veggie-Packed Twist on Lasagna You'll Want to Make ASAP

If you’re looking for a comforting, veggie-packed main dish for weeknights, Giada De Laurentiis just shared a cheesy dinner you’re going to fall in love with. And no, it’s not a traditional baked pasta.

“Everybody knows I love all things pasta, but sometimes it’s fun to switch it up a bit,” De Laurentiis writes in the caption of her recent Instagram video.

Using seasonal produce, De Laurentiis showed us how to whip up her Zucchini Lasagna Rolls, and they’re surprisingly simple to make with prep time only taking 20 minutes. Here’s everything you need to know.

In the video, De Laurentiis starts by cutting thin strips of zucchini using a vegetable peeler. Then, she mixes up the filling for her rolls, which includes ricotta, spinach, oregano, parmigiano reggiano cheese, prosciutto, egg and salt. After placing a dollop of the creamy mixture on each zucchini strip, the chef rolls them up and places them upright in a greased casserole dish.

When all the rolls are packed in the pan, De Laurentiis pours marinara over the zucchini rolls until fully coated and tops it off with shredded mozzarella cheese. After baking it in the oven at 450 degrees F for 30 minutes, the result is “delicious, cheesy perfection.”

Replacing lasagna sheets with zucchini is a great way to add in more veggies and use up your harvest. Like De Laurentiis’ version, ours uses three cheeses and spinach—but the EatingWell recipe opts for frozen spinach for easier prep.
