Tuna Crudo with Soy Marinade, Avocado and Green Tomatoes

Tuna

  • 8 oz tuna, sushi grade, sliced into 16 pieces
  • 2 tbsp Soy Marinade (see recipe below)
  • 1 oz Cured Green Tomatoes (see recipe below)
  • 1/2 cup baby spicy greens (arugula or mustard greens)
  • 4 tbsp avocado, small dice
  • 1 tbsp extra virgin olive oil
  • fleur de sel
  • fresh black pepper
  1. Lay out the tuna on a tray so they do not overlap.  Brush the tuna with the marinade and season with fleur de sel and black pepper.
  2. Place four slices of tuna per plate, flat.  Divide the green tomatoes, baby greens, and avocado artfully on the tuna.  Drizzle with extra virgin olive oil as needed to moisten the fish.

    Soy Marinade

    • 1 tbsp lime juice
    • 1/2 tsp soy sauce
    • 1 tbsp extra virgin olive oil
    • fresh cracked pepper
    1. Combine the wet ingredients and season with fresh cracked pepper.

      Cured Green Tomatoes

      • 1 oz green tomatoes
      • 1 tsp extra virgin olive oil
      • 1/4 tsp champagne vinegar
      • kosher salt
      1. Peel green tomatoes, remove seeds and cut in to thin strips (julienne).
      2. Season the tomatoes liberally with kosher salt and allow to sit for 2 hours.  Dress in the olive oil and store.
