Tuna Crudo with Soy Marinade, Avocado and Green Tomatoes



  • 8 Ounce tuna, sushi grade, sliced into 16 pieces
  • fresh black pepper
  • fleur de sel
  • 1 Tbsp extra virgin olive oil
  • 4 Tbsp avocado, small dice
  • 0.5 cup baby spicy greens (arugula or mustard greens)
  • 1 Ounce Cured Green Tomatoes (see recipe below)
  • 2 Tbsp Soy Marinade (see recipe below)
  1. Lay out the tuna on a tray so they do not overlap.  Brush the tuna with the marinade and season with fleur de sel and black pepper.
  2. Place four slices of tuna per plate, flat.  Divide the green tomatoes, baby greens, and avocado artfully on the tuna.  Drizzle with extra virgin olive oil as needed to moisten the fish.

Soy Marinade

  • fresh cracked pepper
  • 1 Tbsp extra virgin olive oil
  • 0.5 tsp soy sauce
  • 1 Tbsp lime juice
  1. Combine the wet ingredients and season with fresh cracked pepper.

Cured Green Tomatoes

  • 0.25 tsp champagne vinegar
  • 1 tsp extra virgin olive oil
  • 1 Ounce green tomatoes
  • kosher salt
  1. Peel green tomatoes, remove seeds and cut in to thin strips (julienne).
  2. Season the tomatoes liberally with kosher salt and allow to sit for 2 hours.  Dress in the olive oil and store.
