Tomato Basil Penne with Sweet Potato and Beet Balls is a delicious and wholesome dinner that my children love for a weeknight dinner. With a little preparation, this dish can be prepared in under an hour and you will be surprised with the compliments you get.
Ingredients
- 1 recipe of <a href="http://www.kitchendaily.com/recipe/sweet-potato-and-beet-balls">sweet potato and beet balls</a>
- 1 recipe of <a href="http://www.kitchendaily.com/recipe/tomato-basil-sauce">tomato basil sauce</a>
- fresh basil twig
- 3 cup penne, cooked al dente
- salt to taste
- olive oil
- grated parmesan cheese
- crushed black pepper
Directions
- When you are ready to serve, give the pasta sauce a quick boil and warm the sweet potato and beet balls.
- Place the cooked pasta on individual plates, place 3 balls over the cooked pasta, drizzle a bit of olive oil, pour a large cup of pasta sauce over this. Garnish with crushed black pepper, parmesan cheese and basil
- Serve immediately.
