Simply Peachy Steak Omelette



  • 6 Ounce packaged pre-cooked steak strip
  • 2 Tbsp water
  • 3 eggs
  • cooking spray
  • 0.33 cup feta cheese
  • 0.5 small avocado, peeled, sliced
  • 1 peach, peeled, sliced
  • 0.5 cup red and yellow bell pepper strip
  • 1 garlic clove, minced
  • salt and pepper


In medium prepared omelette pan, on medium high heat, sauté steak, garlic, and bell peppers for 5 minutes. Add the peaches and continue cooking for 2 minutes. Add avocado and feta cheese and set aside. Using the same omelette pan, wipe out with paper towels and spray with cooking spray; bring to high heat. Whisk together the eggs, water and a dash each of salt and pepper.

Pour eggs into hot omelette pan. With a heat-resistant rubber spatula, gently push one edge of the egg into the center of the pan, while tilting the pan to allow the still liquid egg to flow in underneath. Repeat with the other edges, until there's no liquid left. Spoon steak mixture onto one side of omelette and fold over. Gently fold over onto plate. Garnish with bell pepper and feta cheese.
