Quick Overnight Oats

This morning I wanted cold oats but hadn’t planned ahead last night – enter “faux”-vernight oats.

Inspired by my carrot cake breakfast cookie.

The same texture and refreshing cool temperature as overnight oats without the 8 hour wait!


  • 1 small carrot, shredded
  • 0.33 cup oat
  • 3 Tbsp water or almond milk
  • 1 Tbsp raisin
  • 0.5 tsp cinnamon
  • 0.125 tsp nutmeg
  • pinch of salt
  • 1 tsp maple syrup
  • 0.33 cup Greek yogurt


  1. Microwave shredded carrot, oats, and water for about 1 minute (until water is absorbed and carrots are soft).
  2. If desired, let cool slightly.
  3. Add remaining ingredients and stir well to combine.
