Pecan Pie Muffins

It's just like enjoying a slice of Pecan Pie….without the need for utensils!
- 1 cup packed light brown sugar
- 1 cup pecans, chopped
- 0.5 cup flour
- 1 stick butter, melted
- 2 eggs
- 1 Tbsp vanilla extract
- Mix the brown sugar, pecans and flour in a mixing bowl. Whisk the butter, eggs and vanilla extract in a separate bowl until well blended. Combine the butter mixture into the brown sugar mixture, slowly, and stir just until moistened.
- Fill paper-lined miniature muffins cups about ? full. Bake at 350 degrees for about 20-22 minutes, or until a toothpick comes out clean. Serve warm.
- Makes approx 2 dozen muffins.
