Overnight Pumpkin Vanilla Oatmeal

The easiest way to eat healthy in the morning- overnight Pumpkin Vanilla Oatmeal! Mix everything together in the evening and it's good to go in the morning!


  • 0.5 cup quick oats
  • 0.67 cup vanilla almond milk
  • 0.25 cup pumpkin puree
  • 1 Tbsp ground flaxmeal
  • 1 Tbsp maple syrup
  • 0.25 tsp ground cinnamon
  • 0.5 tsp vanilla extract
  • For topping/serving: 1 tbsp. chopped pecans, ¼ cup vanilla yogurt (use coconut/soy vanilla for vegan version or regular)


  1. In a mason jar, layer the oats, almond milk, pumpkin puree, flaxmeal, syrup, cinnamon and vanilla extract. Cover tightly and place in the refrigerator.
  2. Serve with chopped pecans and vanilla yogurt.
