Vanilla Chia Pudding
- 2 cup almond milk
- 1 tsp vanilla extract
- 1 tbsp raw honey, agave nectar or maple syrup
- 1/2 cup chia seeds
- To make the chia pudding: Mix the almond milk, vanilla extract and sweetener in a bowl. Add the chia seeds and stir to combine. Allow the seeds to set for 20 minutes, and then stir once more. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight.
Chocolate Coffee Overnight Oats
- 3/4 cup almond milk
- 1/4 cup brewed coffee
- 1 tbsp cacao magic, cacao powder or cocoa powder
- 1 tbsp raw honey, agave nectar or maple syrup
- 1 cup rolled oats
- To make the overnight oats. Mix the almond milk, coffee, powder and sweetener in a bowl. Add the rolled oats and stir to combine. Cover with plastic wrap and refrigerate for 2 hours, or overnight.
The Jars
- coconut flakes
- almonds, berries, bee pollen, cacao nibs or maple syrup
- To make the jars (You could also do this in a bowl, of course!): Layer the chia pudding, coconut flakes and overnight oats. Sprinkle with desired toppings.
Notes: I like adding the coffee to my oats because I think it gives them a more robust flavor. It is also an extra pick-me-up, but including coffee is optional. If you want to keep things caffeine-free, replace the coffee with an additional ¼ cup of almond milk.
