Lightened Up Beef & Vegetable Stir-Fry

Ingredients

  • 1 lb boneless beef sirloin steak, 3/4-inch thick
  • vegetable cooking spray
  • 2 cup broccoli florets
  • 2 cup sliced mushrooms
  • 2 cup onion wedges
  • 1/2 tsp garlic powder
  • 4 clove garlic, minced
  • 1 can (10 3/4 ounces) <a href="http://www.campbellskitchen.com" target="blank">Campbell's® Healthy Request® Condensed Cream of Mushroom Soup</a>
  • 1/2 cup water
  • 1 tbsp low-sodium soy sauce
  • 4 cup hot cooked rice, cooked without salt

Directions

Slice beef into very thin strips.

Spray skillet with cooking spray and heat over medium-high heat 1 minute. Add beef and cook until browned, stirring often. Remove beef.

Remove skillet from heat. Spray with cooking spray. Add broccoli, mushrooms, onion and garlic powder and cook until tender-crisp.

Add soup, water and soy sauce. Heat to a boil. Return beef to skillet and heat through. Serve over rice.


Tip: To make slicing easier, freeze beef 1 hour.
