Katie's Pimento Goat Cheese

  • 1 11-ounce log of fresh goat cheese, softened
  • whole radish, for serving
  • salt and freshly ground black pepper
  • 1 tsp tabasco sauce
  • 1 tsp onion powder
  • 1 Tbsp sweet pickle relish from a jar
  • 2 scallions, thinly sliced
  • 0.25 cup drained jarred pimientos, coarsely chopped
  • 0.5 cup mayonnaise
  • 4 Ounce smoked cheddar cheese, coarsely shredded 1 package 1 cup
  • celery rib, for serving


1. In a medium bowl, using a wooden spoon, blend the goat cheese with the cheddar, mayonnaise, pimientos, scallions, pickle relish, onion powder and Tabasco and season with salt and pepper. Transfer the pimento cheese to a bowl and serve with radishes and celery ribs.
