Ginger Beef Salad

Ingredients

  • 2 Tbsp rice vinegar
  • 0.25 cup chopped cilantro
  • 6 radish, thinly sliced
  • 1 cup dried chow mein noodle
  • 12 Ounce mixed greens, 8 cups
  • 0.5 Coriander-Dusted Roast Beef or 12 ounces roast beef, shredded
  • 1 Tbsp sugar
  • 1.5 Tbsp minced fresh ginger
  • 2 Tbsp canola oil
  • 2 Tbsp Asian fish sauce
  • 0.25 cup chopped mint

Directions

1. In a large bowl, whisk the vinegar with the fish sauce, canola oil, ginger and sugar. Add the shredded beef, mixed greens, dried noodles, radishes, cilantro and mint and toss. Serve right away.
