Fresh Herb and Tomato Salsa with Smoked Cheese
- 2 cup mixed yellow and red grape tomato, halved or quartered
- 0.5 cup finely diced smoked Gouda, smoked cheddar or smoked Monterey Jack cheese (2 1/2 ounces)
- 0.25 cup chopped cilantro
- 2 Tbsp shredded basil
- 2 Tbsp snipped chives
- freshly ground pepper
1. In a medium bowl, toss the tomatoes with the cheese, cilantro, basil and chives. Season with salt and pepper and serve.
