Chopped Chicken and Avocado Salad

This salad is a perfect way to get some good fats into your diet.  Add some avocados, nuts and use a dressing that has some plant-based oils in it.

Chopped Chicken and Avocado Salad

  • romaine lettuce
  • almonds or walnuts (optional)
  • feta cheese
  • avocado, chopped
  • roma tomatoes, sliced
  • purple onion, sliced
  • grilled chicken, chopped
  • baby spinach
  1. Grill your chicken (marinate or season it as desired), chop it and set it aside.
  2. Wash your lettuce and spinach and tear the leaves into bite size pieces.  Fill a bowl full of them.
  3. Add the rest of the ingredients and toss together.  Add as many of each ingredient for your personal taste preferences.
  4. Drizzle your favorite Salad Dressing over the salad and enjoy!

Greek salad dressing

  • 1 tsp dijon-style mustard
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1.33 tsp dried basil
  • 1.33 tsp dried oregano
  • 1.33 tsp garlic powder
  • 0.5 cup olive oil
  • 0.67 cup red wine vinegar
  1. In a container, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon-style mustard. Pour in the vinegar, and mix vigorously until well blended. Store tightly covered at room temperature.
