Cauliflower Fried Rice with Vegetables

Serve yourself seconds of this healthy fried rice! Grated cauliflower replaces traditional rice in this dish and is cooked with crunchy carrots, bell pepper, corn, zucchini, garlic, and ginger for lots of flavor without the extra fat.
- 1 crown cauliflower
- 1 zucchini
- 1 red bell pepper
- 1 carrot
- 2 scallions
- 2 cloves garlic
- 3 Tbsp soy sauce
- 1 thumb ginger
- 1 Tbsp olive oil
- Peel and halve the carrot lengthwise. Cut into half moons. Cut the zucchini into ½-inch cubes. Remove the core, seeds, and veins from the pepper and thinly slice. Thinly slice the scallions, keeping whites and greens separate. Mince the garlic and ginger. Finally, grate the cauliflower. Alternatively, finely chop.
- Heat 1 tablespoon olive oil in a non-stick pan over medium high heat. Add the pepper, zucchini, and carrot and cook for 5 minutes, until softened.
- Add the cauliflower, ginger and garlic. Cook, tossing for 3 minutes. Add the soy sauce and toss. Cook for 2 more minutes, or until cauliflower and the rest of the veggies are cooked through.
- Finish: Serve your healthy fried rice in bowls.
