Caesar-Style Dressing

Ingredients

  • 0.5 cup mayonnaise
  • kosher salt
  • 2 Tbsp freshly grated Parmigiano-Reggiano cheese
  • 1 tsp Dijon mustard
  • 1 Tbsp water
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp capers, drained
  • 1 small clove garlic, chopped
  • 2 oil-packed anchovy, drained
  • freshly ground pepper

Directions

1. In a food processor, combine the mayonnaise, anchovies, garlic, capers, lemon juice, water and mustard and process until smooth. Add the cheese and pulse to blend. Season with salt and pepper.
