This hearty and colorful salad, thanks to bright green asparagus and red quinoa, is great with fish or on its own
Ingredients
- red quinoa
- olive oil
- lemon juice
- sliced raw asparagus
- radish
- cilantro leaf
- toasted walnut
- salt and pepper
Directions
Toss cooked red quinoa with olive oil, lemon juice, sliced raw asparagus and radishes, cilantro leaves, and toasted walnuts; season with salt and pepper.
