Parfait Perfection

I'm not sure if you've noticed, but it's already May. I know you've heard it a hundred times (and most likely said it yourself as much, too) but where has this year gone? Seriously. Time is flying, and with it, the end of the Buddy's preschool days. Forever. As in, next year my little guy will be in Kindergarten and preschool will be a distant memory. Except for the fact the Baby will be in her first year of preschool. I wonder how they're coming on the whole 'freezing time' thing. If it were a thing, that is.

I guess that's something that we can always count on. Time keeps moving. And as much as I joke, I wouldn't want it any other way. With each day, there comes a new adventure, a new thing to look forward to. And in the case of today, a new delicious snack: Quaker Mixed Berry Oatmeal Cookies. And yes, they are as good as they sound. They're a wonderfully crunchy, berry studded little cookie packed with the power of Quaker oats. I am a huge fan of the individually wrapped portions that help keep me on track, not to mention they're filled with 10 grams of whole grains per serving and provide a good source of fiber*.

While they are perfect to throw in my purse when we're running from errands to school to gymnastics (you get my drift) I have found another way to eat them that makes for the perfect afternoon snack: mini yogurt parfaits.
