Learn How to Make a Candy Corn Whoopie Pie for Halloween


October 30th is National Candy Corn Day! As Roni Proter from Dinner Reinvented knows, candy corn is the the quintessential Halloween candy, which makes candy corn cereal the perfect sweet to incorporate into desserts this time of year. In the video above, Roni demonstrates how to make this great treat!

In an electric mixer, beat butter on medium speed for about 30 seconds. Next comes the sugar. You can use any sugar, but Roni loves brown raw sugar. She then adds baking soda and salt, and beats until really well combined. (She advises to scrape the bowl when you need to.) Beat in the egg and vanilla, and then alternate adding flour and buttermilk on low speed after you add each.

Once the mixture is complete, drop the cookie batter onto a parchment-lined baking sheet and sprinkle the candy corn cereal in the center of each cookie. Bake them at a 350 degrees for around 7 to 8 minutes, or until they brown. Once they're done, you can transfer them to a cooling rack and work on the filling!

Combine butter, powdered sugar, ground cereal and marshmallow fluff with vanilla, and beat all these ingredients on medium speed until smooth. Then refrigerate the mixture. After it's cooled, put the filling inside a Ziploc bag and cut one of the bottom corners to create an alternative to a piping bag if you don't have one. Pipe some of the filling onto the center of one cookie, and smooth it out. Then place another cookie on top, and you'll have a Candy Corn Whoopie Pie!
