How to Make Two-Ingredient Pancakes in Under Five Minutes


Pancakes are such a wonderful breakfast or brunch dish. Often carb-heavy, pancakes are sometimes ignored for options considered lighter, like omelets. Well, we have some good news for you. Healthy and lighter pancakes are very simple to make, and this recipe shown in the video above is perfect as both an on-the-go breakfast or a regular sit down meal. The best part? These pancakes require only two ingredients and can be prepared in five minutes. (Yes, you read that correctly!)

Emily Olson begins by slicing up a banana and mashing it well in a bowl. Make sure to mash it as much as possible so that the consistency is smooth. (This is where an overripe banana comes in handy.) Once mashed, crack two eggs and add them to the bowl. Mix the two ingredients together well.

Add a little bit of coconut oil to a cooking pan. Spoon some of the mixture into the pan like you would with ordinary pancakes. Emily recommends making smaller pancakes so that they are easier to flip, because they'll be thin like crepes. Cook the pancakes for only about one minute per side.

Once cooked, you can eat them plain or add your favorite spread! Emily likes to use almond butter, but says you can also add a fruit jam if you like a sweeter morning meal. If you want to enjoy these pancakes on-the-go, place them on parchment paper and then add your spread. Wrap them up in the parchment and be on your way!
