How to Make Quickly-Cooked Eggs with Spinach and Tomatoes


It's easy to ignore your healthy regime during the holidays. So why not do you best and start the day off right with a healthy breakfast? This easy breakfast is filled with veggies and your favorite type of eggs. The best part? This recipe requires only four ingredients!

Start by sauteeing grape tomatoes in olive oil. Sarah Carey recommends piercing the tomatoes to speed up the process. This will emit the juice from the tomatoes and help them to cook. Saute the tomatoes for around three minutes. Once the tomatoes have begun to break down, add a pound of spinach to the pan. You can add the spinach in batches so as not to overwhelm the pan. Don't let the spinach wilt too much! Once the veggies have cooked, put them on a plate and set them aside.

Now it's time to cook the eggs. You can even use the same pan! Just add a little bit more olive oil. Sarah Carey likes hers sunny-side up, but you can cook the eggs any way you wish. Top the veggies with your eggs and enjoy!
