Grilling plantains is actually "idiot-proof," according to chef Douglas Rodriguez, the godfather of Nuevo Latino cuisine. Plantains, which are like bananas' starchier cousin, have a "natural, earthy, smoky flavor" when grilled, "a perfect complement to a barbecue dinner." The procedure is super easy because the skin on the plantains will begin to split when they are done, usually in 25 to 30 minutes.
