Kitchen Daily: What's your favorite wine to drink, hands down?

John McDonald: George Pinor Noir: This is a small-batch pinot noir by a guy named George. He's a mad scientist. He doesn't necessarily farm his own grapes because doing so can be pretty risky, so he curates the best from the region. I think he only does three or four different wines each year. My sommelier turned me onto it, I've turned a dozen passionate pinot drinkers onto it, and it's always a home run.

KD: What do you find is the most difficult part about opening restaurants?

JM: The most difficult part of opening a restaurant is not allowing the chaos to overwhelm you or senior members of the team. Just find specific problems each day and solve them one at a time.

KD: Do you ever have a hard time deciding what dishes will go on a menu?

JM: It's always hard to separate what I personally might love and what you realize will work and sell. Within a few weeks the numbers do the talking and if you listen, you make changes to drop the weakest items.

KD: What’s the most unforgettable piece of advice you’ve received?

JM: Be the hardest worker in the room.

KD: Is there anything you haven't done yet that you want to do?

JM: I haven’t done a hotel project. At some point, that would be the next challenge I'd like to tackle from the ground up.
