Look at the construction

I'm not saying an all-foam mattress will make you sweat all night. I will say, however, that adding a coil base to a mattress makes a big difference in terms of breathability. Hybrid mattresses allow you to enjoy the comfort of those plush layers without the heat-trapping effects, while innerspring mattresses (which have v thin comfort layers) have the best airflow of all. Like I said before, cooling tech (like gel- and copper-infused foams) is a nice bonus, but it won't make a difference in a hot, stuffy, heat-trapping mattress.

Typically speaking, the more coils a mattress has, the more support it provides, with individually-wrapped coils being the best option for absorbing motion and adapting to the body (not to mention promoting airflow). And, ofc, the type of foam used in your mattress matters, too.
