Internal Steak Temperatures

Using your meat thermometer is the best way to know if your steak is done. Simply insert the thermometer into the thickest part of the steak. You'll want to avoid the bone or fat and use the following temperature guide below.

But here's the trick: The temperature of the meat will continue to rise a few degrees after it's removed from the heat, so keep that in mind when looking at your thermometer.

"Remember, you can always throw a steak back on the grill if it's too red for your taste," Ree says, "but you can't undo it if it's overcooked!"

Rare

  • Temperature: 125˚ to 130˚

  • Color: Very red center

  • Texture: Soft interior

Medium Rare

  • Temperature: 130˚ to 135˚

  • Color: Bright pink center

  • Texture: Mostly soft interior; springy

Medium

  • Temperature: 135˚ to 145˚

  • Color: Pink center

  • Texture: Slightly firm

Medium Well

  • Temperature: 145˚ to 150˚

  • Color: Pinkish brown center

  • Texture: Stiff to touch

Well Done

  • Temperature: 155˚ or higher

  • Color: Brown center

  • Texture: Firm

Helpful Tips for Cooking Steak

  • Bring your steak to room temperature. If your steak is cold, it won't cook as evenly, so be sure to leave your steaks out at room temperature for about 30 minutes.

  • Season your steaks—whether you like to go bold with flavor or keep things simple with just salt and pepper.

  • Make sure the grill or pan is hot. This will ensure you get a nice crust on the steak.

  • Use your meat thermometer to test for doneness.

  • Let your steak rest! This step is important to ensure the juices stay in the meat rather than running right out. Wait for at least five minutes before slicing your steak.
