Inspector Notes: Observed raw chicken stored in between raw beef and raw fish on the same shelf in the walk-in cooler. Observed Raw shelled eggs stored on bottom shelf next to chicken in the walk-in cooler. Observed dish machine in the kitchen to not be pulling any sanitizer.

Inspector Notes: Observed broccoli, cabbage, and onions stored uncovered in the walk-in cooler. Observed sweet and sour chicken dated 1/22 in reach-in cooler holding at 60F. Reach-in cooler ambient temperature was 56F. Unit is a residential refrigerator, if unit is broken it shall be replaced with a commercial grade reach-in unit. Observed various food items (chicken, pork, dumplings, etc) stored in the reach-in coolers and freezers in grocery bags.

Inspector Notes: Observed dish machine at a sanitizing concentration of 0 ppm chlorine. Observed cold TCS food items (butter chips, Vietnamese coffee, and milk) cold holding above 41 F in the bar cooler. Observed hot TCS food items (grits, grilled onions, melted butter) hot-holding below 135 F on the steam table and grill/stove. Observed Cuban sauce (made with canned chipotles and mayonnaise) with a prepared date of 12/1 and 1/8; Avocado mousse (made with fresh avocados and mayonnaise) with a prepared date of 1/9; Garlic aioli (made with fresh garlic and mayonnaise) with a prepared date of 1/8 in the reach-in cooler. Also observed shoulder bacon with a prepared date of 1/12; and coleslaw with a prepared date of 1/8 in the prep-top cooler.
